Acme Brewing and Baking is a company involved in developing better fermentation methods using yeast to produce CO2 and alcohol (ethanol) from sugars or other carbohydrates.

Fermentation is a process in which microorganisms such as bacteria or yeast convert organic compounds, typically carbohydrates, into alcohol or other products. This process has been used for thousands of years and continues to be used to:






  • 1. Help preserve food by creating an environment that is inhospitable to other microbes that cause spoilage. This allows people to store food for longer periods of time without it going bad.
  • 2. Produce a wide variety of food and beverages, including bread, cheese, pickles, yogurt, beer, wine, and spirits. These products are enjoyed by people all over the world and contribute to the diversity and enjoyment of our diets.
  • 3. Convert organic waste into valuable products such as biofuels and animal feed. This helps to reduce waste and can provide a sustainable source of energy and nutrition.
  • 4. Help improve gut health and prevent diseases through fermented products, such as yogurt and sauerkraut, that are rich in beneficial bacteria.
  • 5. Produce a variety of medicines, including antibiotics and vaccines.

AB&B uses the yeast Saccharomyces cerevisiae to conduct its investigations, which began with studies of temperature effects and different concentrations and types of sugars. More recently AB&B has become interested in the effects of incubating yeast with different increased levels of various micronutrients.
